Introduction

Adapted from "Joy the Baker" with less butter. Whole grain and low sugar, but a delicious special treat! Adapted from "Joy the Baker" with less butter. Whole grain and low sugar, but a delicious special treat!
Number of Servings: 8

Ingredients

2 cups cooked brown rice (cooked w/ .5 tsp salt)
4 cups milk (I used 1/2 plain soy milk, half 1.5% milk)
    2 Tbsp sugar
    2 Tbsp honey
cinnamon (1 tsp ground and/or cinnamon stick)
1 tsp vanilla (or 1 vanilla bean)
nutmeg, allspice, or cardamon (total 1 tsp)
.5 cup raisins or dried cherries (or other dried fruit)- Optional

Tips

Choose your own add-ins or specific spices. The lowfat milks didn't seem to make a difference, I might try it with skim milk next time.

Directions

stir milk, sugars, and spices together until at a low boil (stir often to prevent scalding). Add rice, butter, and raisins. Stir often for 20-40 minutes until desired consistency. Let cool and serve at room temp.
