Ingredients

    1 small onion
    garlic
    0.5 green pepper
    1 yellow pepper
    2 small chicken breasts (165g), cut into strips
    100g diced bacon
    400g can chopped tomatoes
    some Taco seasoning spices (about 1 tsp)
    4 flour tortillas
    125ml Elmlea light
    90g cheese

Directions

1. Dice the onion and slice the peppers. Spray a frying pan with oil. Add the onion, garlic and peppers and cook for 2 - 3 minutes.
2. Stir in the sliced chicken and bacon pieces.
3. Add the taco seasoning. Continue to cook for another 2 -3 minutes.
4. Add half the tomatoes and simmer for 5 minutes.
5. Blend the remaining tomatoes until smooth and add the cream.
6. Heat the tortillas if required to make them pliable. Divide the filling between the tortillas and roll and place in a baking dish.
7. Pour the tomato and cream sauce over the tortillas and sprinkle with the cheese.
8. Cook in the oven, Gas Mark 4 for about 30 minutes, until the cheese is browned.
