Ingredients

    1 bag frozen carrots
    2 bags frozen bell peppers & onions
    6 cloves garlic, finely minced
    8 boneless skinless chicken breast halves (about 4 pounds)
    4 tsp. ground ginger
    2 tsp. salt
    1 tsp. pepper
    16 ounces orange juice concentrate
    3 cans Mandarin orange segments, undrained
    6 cups hot cooked rice

Tips

This was reeeeally watery. Sauce didn't thicken at all :(


Directions

Put carrots, bell peppers, onions, garlic, then the chicken, ginger, salt, pepper and frozen orange juice in crock pot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments.
