    4 egg white
    garlic powder
    Liquid egg substitute
    S&P if desired


cook brown rice according to instructions
spray a 9x13 cassarole dish. mix rice with garlic powder and the 4 egg whites and press down firmly into cassarole dish to make a crust. bake in preheated 350 degree oven for 10 minutes or until begins to lightly brown. in the meantime with the oil sautee the sliced tomatoes, peppers and onions with the fresh garlic and cumin (S&P if desired). once veggies are tender remove and add evenly to the prebaked crust. pour liquid egg substitute over evenly and bake approx 30 minutes or until a pick inserted into the center comes out clean.

Serving Size: makes 8 slices in a 9x13 cassarole dish
