Ingredients

    0.5lbs Lean Ground Beef
    2 Onions, chopped
    4 cloves Garlic, sliced
    1 tsp Chili Powder
    1 tsp Cilantro, dried
    1 tsp Cumin, ground
    2 cups Sweet Potato, chopped
    1 12oz can Sweet Corn
    1 19oz can Chopped Tomato
    1 19oz can Black Beans, drained and rinsed
    1 cup Salsa
    4 cups Beef Broth

Tips

Use your favourite salsa and adjust chili powder to your liking.


Directions

Add onions and garlic to a large pot and saute until slightly translucent. Add Beef and brown. Drain off excess fat.
Add Chili powder, cilantro and cumin and stir until fragrant, roughly 2 minutes over medium heat.
Add sweet potato and cook for 5mins.
Add rest of ingredients and bring to a boil.
Simmer for 20mins or until sweet potato is cooked.

Add cheese, sour cream or plain yogurt before serving if you'd like.
