Ingredients

    Ingredients:
    Kale, 2 cup, chopped
    1/2 cup cooked Quinoa
    Mushrooms, fresh, 3 small
    two packets bullion (chicken or shromp taste best)
    Tofu, soft, .5 cup (1/2" cubes)
    3 cups water


Tips

This soup is rather like a pumped up miso soup, and some miso paste would definitely be delicious in it!


Directions

Mix all ingredients but quinoa with about 3 cups water, boil gently for 15 minutes. Add Quinoa in last five minutes, or just before serving.

Serving Size: two servings (very satisfying if you eat both!)
