Introduction

I altered the original Mauna Loa cookie recipe in an attempt to make it a little more figure friendly (if that is possible - it is a cookie after all).
I couldn't find the white chocolate chip ingredient to include and I also used splenda brown sugar instead of regular brown sugar and light butter instead of regular butter, I also used my food processor to grind up old fashioned oats to incorporate into my recipes.

Ingredients

    1 cup all purpose flour
    1 1/2 cup whole wheat flour
    1/2 cup old fashion oats
    1 cup light butter
    3/4 cup splenda sugar
    3/4 cup sugar
    1/4 cup splenda brown sugar
    2 large eggs
    1 1/2 tsp. vanilla extract
    1/2 tsp. baking soda
    1 tsp salt
    12 oz. white chocolate chips
    1 1/2 cup chopped macadamia nuts

Tips

When using wheat flour and ground oats, I like to use a sifter to ensure there are no lumps.


Directions

Cream butter and sugars until fluffy. Add eggs and vanilla beat well. Blend in flour, baking soda and salt. Stir in white chocolate chips and macadamia nuts.
Drop by teaspoons onto ungreased baking pans.
Bake on 350 for 10-12 minutes

Serving Size: makes approximately 7 dozen cookies
