Ingredients

    White Rice, long grain, 3 cups dry

    Ground beef, extra lean (93/7), 1 lb
    Onions, raw, 1 medium, diced
    Sweet peppers (bell), .75 cup, chopped
    Garlic, 3 tsp chopped

    Del Monte Petite Cut Diced Tomatoes, 2 cup (1 can)
    Chili powder, 1 tbsp
    Ground Cumin, 1.5 tsp
    Pepper, black, .5 tsp
    Smoked Paprika, 1 tsp
    Pepper, red or cayenne, .5 tsp

Tips

I think it would be great to mix in some black beans or corn if you can have them as well. Neither those or the garnishes are in the nutrition information. It will serve more than 6 if you have small appetites.


Directions

Start the Rice in a rice cooker.

While the rice is cooking, brown the beef and vegetables except tomatoes. When the meat is done, add the tomatoes (with the juice in the can) and the spices. Let it simmer until the rice is done on low heat.

When the rice is done, mix it into the meat/veggie mixture.

Serve with cheese or sour cream for a tasty garnish. You could also add a salad if this was not quite enough for a whole meal by itself.
