Introduction

This is perfect if you LOVE cilantro. You can, instead of using the little bit of dry cilantro, go ahead and use a full 1/4 cup of raw cilantro, rinsed and chopped. Ingredients

    8 boneless, skinless chicken thighs, cut into cubes

    .5 cup each chopped onions and chopped bell peppers

    1 tablespoon each onion powder, garlic powder, chilli powder,cumin powder, and paprika

    2 tablespoons dry cilantro

    6 tablespoons chopped fresh cilantro

    6 cups of water

    5 chicken boullion cubes

Directions

In a large soup pot, sautee onions and peppers in butter for 3 minutes. Add in the chicken and sprinkle with the seasonings. Add water and boullion cubes. Cook on medium high heat until the broth reduces some, and chicken is cooked through.
