    1 whole head of garlic
    3 t extra virgin olive oil
    1 10 oz pkg pizza dough (refrigerator dough)
    2 C baby spinach leaves
    3/4 C shredded skim mozzarella
    1/4 C grated parmesan
    3/4 C halved cherry tomatoes
    1 T pine nuts
    fresh basil leaves
    2 chicken breasts, skinned (broiled with lemon pepper and cubed)


Cut across top of head of garlic, drizzle 1 t of olive oil over cloves, wrap in foil and bake at 425 degrees for approximately 30 minutes or until cloves are tender. Remove cloves and set aside.

Broil chicken breasts with lemon pepper (to taste); cube.

Spread pizza crust dough onto pizza pan. Brush remaining 2 t olive oil over crust. Top with chicken, garlic, spinach leaves, tomatoes, pine nuts, and then the cheeses.

Bake at 475 degrees for 10 minutes or until crust is browned.

Top with basil and serve.
