Ingredients

12 ounces cream cheese, softened
5 eggs
2 teaspoons vanilla extract
15 drops EZ Sweetz liquid sucrulose (or use Splenda)
1-1/2 cups almond meal
1 cup wheat bran
2 teaspoons cinnamon
1 teaspoon baking powder
1/2 cup chopped pecans
1/2 cup sugar-free chocolate chips
Tips
These freeze very well.
Directions
Preheat oven to 325 F. Put muffin liners in 12 muffin cups.
Put cream cheese and two eggs in the bowl of an electric mixer. Beat with a flat beater until smooth. Add rest of eggs, one at a time, beating briefly after each. In another bowl, blend by hand the bran, almond meal, cinnamon and baking powder. On slow speed, add this to the egg mixture. When mixture is well blended, stir in the nuts and chips by hand.
Fill the muffin pans almost to the top. Bake muffins for about 20-25 minutes or until golden brown.
Serving Size: Makes 12 muffins.
