Introduction

This is a special recipe due to the sweet potato puree as the starting point. This is a special recipe due to the sweet potato puree as the starting point.
Number of Servings: 10

Ingredients

    3 - 15 oz can of sweet potato puree
    3/4 cup brown sugar
    1 beaten egg
    1 tspn vanilla
    4 tblspn melted unsalted butter
    1/4 tsp salt
    1/2 tspn cinnamon
    1 - 10.5 oz bag mini marshmallows

Directions

Heat oven to 350 deg.Butter the dish
Mix Sweet Potato Puree, Brown Sugar, salt, cinnamon, egg, melted butter & vanilla.
Pour half of mixture in baking dish
Layer half of marshmallows
Pour remainder of mixture over the marshmallows
Heat for 30 minutes
Top with remainder of marshmallows
Heat for 10 minutes until marshmallows are lightly browned.


Serving Size: makes approx 10 1/2 cup servings
