Introduction

Ingredients

    1 pound uncooked easy-peel shrimp size 16-20 (thawed if frozen)
    1/2 lemon
    1Tbsp olive oil
    1tsp kosher salt
    1tsp black pepper, freshly ground

Tips

Shrimp cook very quickly. Be sure to account for the fact that they will steam in their own juices even off the heat.


Directions

Peel and clean the shrimp under cold running water. Lay out on paper towel or blot dry then place in large zip-lock bag. Add olive oil, salt, and pepper. Seal bag and toss. Let marinate for at least 30 minutes and up to an hour tossing occasionally. Preheat grill or grill pan on highest setting. Once the grill or grill pan is hot, place shrimp on grill. They may jump around a bit, but that is perfectly fine. As soon as they begin to turn pink around the edges, turn them over. Squeeze the lemon over the shrimp while they finish cooking. As soon as they are pink all around and no longer look gray or translucent, take them off the heat. Serve immediately.

Serving is 4-5 shrimp size 16-20 in a pound. Recipe serves 4.
