Ingredients

3/4 CUP WATER
1/4 TSP SALT
3/4 CUP MINUTE RICE UNCOOKED
1 1/4 CUPS SKIM MILK
1 EGG YOLK SLIGHTLY BEATEN
3 TBSP SWEETENER
1/3 CUP RAISINS
1/8 TSP. CINNAMON
1/8 TSP. NUTMEG
1 TBSP BUTTER (OPTIONAL WILL RAISE CALORIE COUNT)
Directions
Bring water and salt to a boil. Stir in rice. Cover; remove from heat and let stand 5 mintues. Blend milk and egg yolk together, then stir into rice. Add sweetener to taste, raisins, cinnamon, nutmeg and butter. Mix well and bring to a boil; stir constantly. Cover and remove from heat. Let stand 1 hour. Stir just before seving. Serve warm or cold. makes 4 servings.
