Ingredients

    2-cups broccoli
    2-cups cauliflower
    1-cup celery
    1-cup bell pepper
    1-cup onion
    1-lb cubed chicken breast
    1-can chicken stock low sodium
    2-cups mexican style shredded cheese
    2-pks cream cheese
    2-tbls curry powder

Tips

Add jalapeno for a spicier dish


Directions

Cut broccoli, cauliflower and chicken into same bite size pieces. Dice onions, celery and bell peppers. Add all to a lightly oiled skillet.

Add cream cheese and chicken broth. Once combined, add curry powder. Place in a casserole dish and bake on 450 for 20-30 minutes or unlit some browning occurs. Top with cheese bake till cheese is melted.

Serving Size: Makes 8 servings
