Ingredients

    4 cups broccoli florets fresh or frozen
    2 cups vegetable stock. Homemade or store bought
    1 tablespoon of corn starch to thicken
    1/2 teaspoon of black pepper to taste
    1/4 teaspoon of onion powder
    1/4 teaspoon of garlic powder
    1/4 teaspoon of ground cumin
    1 large onion peeled and chopped
    1 whole bunch of fresh garlic
    2 tablespoons of olive oil

Tips

Freezes well. I separate into servings for easy heating and portion control


Directions

Peel and chop onion and garlic. Sautéed in 2 tablespoons of olive oil. Add vegetable stock and broccoli. Cook 20 to 25 minutes until broccoli is tender. Add pepper, ground cumin, onion powder, and garlic powder to pot. Take some of the stock and mix with the corn starch. Add the corn starch mixture back to pot. Take off heat.
Put in blender. Separate into 4 8 ounce servings.

Serving Size: Makes 4 8 oz servings
