Ingredients

    1 cup shortening
    1 cup peanut butter
    1 cup granulated sugar
    1 cup brown sugar, packed
    2 eggs
    1 teaspoon vanilla
    2-1/4 cup flour
    2 teaspoons baking soda
    1/4 teaspoon salt

Tips

I usually double the recipe and use 1/4 cup of batter, roll them into balls, press with a fork and bake for 15-17 minutes.


Directions

Preheat oven to 350 degrees.
In large bowl, mix shortening and peanut butter with a wooden spoon. Add sugars, stir well. Add eggs and vanilla, stir well.
In medium bowl, mix dry ingredients. Stir into peanut butter mixture until well mixed. Roll into 1" balls, place onto an un-greased cookie sheet and press with a sugared fork.
Bake for 10-12 minutes.

Serving Size: Makes 62, 2" cookies.
