Ingredients
-
Half of a 32oz. container of Chobani 0% Greek Yogurt
2 medium-large cucumbers peeled
3 tbsp lemon juice
2 tsp fresh, minced garlic
1/2 tsp dill
1/2 tsp mint (optional)
salt & pepper to taste
pepper
Directions
Very simple!
First you want to put the peeled and chopped cucumbers in a colander and set the colander inside of a bowl. Sprinkle a good amount of salt over the cucumbers and put a bowl on top that is big enough to squish all of the cucumbers and place heavy objects in that bowl (soup cans work well.) The salt will help pull out the water in the cucumbers so the sauce doesn't get runny. Let that site for at least a hour, but longer is best. You should pull out at least a 1/2 cup of fluid.
Once the cucs are done put them in your blender or food processor and chop until the pieces are quite small but not total mush. Combine all ingredients. And done!
Serving Size: Makes about 8, 4oz servings
