Introduction
This eggnog can be made with or without Chia seeds. I like the "tapioca" quality the Chia seeds add, but the eggnog is great without them too! This eggnog can be made with or without Chia seeds. Ingredients

3 eggs
3/4 cup egg substitute
4 cups milk, divided
3 T sugar substitute, I use splenda
1/4 tsp salt
1 t vanilla
About 1 T Chia seeds, optional
Tips
I am not a fan of eggs for breakfast, so this is the way I "eat" my eggs in the morning! So yummy it tastes like a treat!
Directions
Beat eggs with egg and sugar substitutes in a medium sauce pan. Stir in 2 cups of milk. Heat mixture on low, stirring constantly until it reaches 160 degrees F. Stir in remaining milk and vanilla.
When I add the Chia seeds to the eggnog, I pour it in a pitcher or bottle that can close tightly. I estimated the amount, I just pour some in! Add the seeds and then shake the container. You can drink it right away or you can refrigerate it and drink it later, just give it a shake before you pour it. Enjoy!
Serving Size: makes 4 generous servings or 6-8 smaller ones
