Ingredients

    3 cups uncooked long grain white rice
    6.5 cups water
    1 tablespoon extra virgin olive oil
    1.5 packets of Sazon Goya with Safron ("con azafran")
    .5 tsp salt
    1 tablespoon each garlic powder and onion powder
    .5 cup each green and red sweet bell peppers
    .5 cup chopped fresh onion
    .5 cup chopped fresh cilantro (or 2 tbsp dry cilantro)
    15 jumbo black olives, chopped small
    1 can of low sodium diced tomatoes, drained or 1 cup fresh diced tomatoes

Tips

You could use brown rice in place of white rice, but this is usually how I make this side dish. You can also do it without the olives, or use the Spanish olives with pimiento.


Directions

In a large pot (that has a fitted lid), combine dry rice with water, along with all the ingredients. Stir well, and cover the pot. DO NOT REMOVE LID UNTIL COOKING PROCESS IS COMPLETE IF YOU DO NOT WANT CRUNCHY RICE! I learned this the hard way! Ha! Turn burner up to high. Once you hear the pot boiling (usually after about 5-6 minutes), reduce heat to medium-low, and cook for about 20 minutes. Turn off the burner and let rice sit for about 10 additional minutes as the burner cools down. When the time is up, stir and fluff the rice with a fork.
