Ingredients

3/4 cup uncooked quinoa, rinsed and well-drained
1/4 cup coconut flour
1/4 cup flaxseed meal
1/2 cup raw pumpkin seeds
1/2 cup whole and/or slivered almonds or other nuts
1/4 cup honey
2 tbsp coconut oil
1 tsp ground cinnamon
1/2 tsp salt
3/4 cup dried berries
2 tbsp chia seed
Tips
Adding mini chocolate chips after cool would be a tasty addition! I used brazil nuts and almonds in my original recipe photo.
Directions
1. Preheat oven to 350 degrees F. In a large bowl, combine dry ingredients. In a small glass or microwave safe bowl, combine coconut oil and honey and microwave on high for 15 second intervals until both are melted. Pour honey mixture over dry ingredients and mix well. Spread in a shallow baking dish.
2. Bake, uncovered, for approximately 20 minutes or until golden brown, stirring twice. Stir in dried berries. Cool completely. Sore in an airtight container or zip top baggie in the fridge for up to two weeks.
