Ingredients

Meatloaf:
1 lb extra lean ground beef
1 egg
1/2 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped apple
1/2 cup cracker crumbs
1/2 cup steel cut oats
1 cup shredded sharp cheddar cheese
2 Tbsp Worcestershire Sauce
6 cloves minced garlic
1 Tbsp Oregano
1 Tbsp Basil
1 tsp Thyme
Gravy:
1/4 cup chopped onion
1/4 cup chopped celery
1/2 cup sliced mushroooms
2 cups low sodium beef broth
2 Tbsp corn starch
Tips
For easy clean-up, wrap rack in foil with opening to the top. Poke holes in top layer of foil to allow fats to drip through in to the "pocket" created by the bottom layer.
Directions
Preheat oven to 350 degrees.
Mix together all "Meatloaf" ingredients in large bowl. Shape into a loaf shape and place on rack in roasting pan.
Insert meat thermometer.
Cook on middle oven rack until thermometer reads 160 degrees (approx. 1-1/2 hours).
Remove from oven and let stand for at least 10-15 minutes before slicing.
In large skillet, lightly saute onions, celery, and mushrooms (just until onions are translucent). Add beef broth and bring to a simmer for approx. 5 minutes. Add 2 Tbsp of corn starch to 2 Tbsp of cold water to create a slurry. Add the slurry to the skillet and stir until colour changes and gravy thickens.
