Number of Servings: 6

Ingredients

    1 package (10 oz) frozen chopped spinach
    3/4 cup liquid egg substitute
    3/4 cup shredded reduced-fat cheese
    1/4 cup tomaotes, chopped
    2 Tbs onion, chopped
    1/8 tsp hot-pepper sauce (or to taste)

Directions

Microwave spinach for 2 1/2 minutes on high. Drain the excess liquid.
Line 12 cup muffin pan with foil baking cups.
Spray cups with cooking spray.
Combine the egg substitute, cheese, tomatoes, onions and spinach in a bowl.
Mix well.
Divide evenly into muffin cups.
Bake 350 degrees F, for 20 minutes until knife inserted inthe center comes out clean.

Quiche cups can be frozen and reheated in the microwave.

    Very Good
    I was looking for the recipe for the South Beach veggie quiche cups and this is it - a bit modified but very good. you can switch up the veggies however you want. I added Mrs Dash Extra Spicy instead of the hot sauce ( I was all out) Use Southwestern style eggs as a switch also. - 3/21/09
