Introduction
This is a delicious, quick and easy to make vegan sausage gravy to put on top of biscuits! This is a delicious, quick and easy to make vegan sausage gravy to put on top of biscuits!Number of Servings: 4
Ingredients

I package of vegan sausage (I use Gimme Lean ground sausage)
2 cups soy milk
1 small onion finely chopped
2 cloves of minced garlic
1 tablespoon extra virgin olive oil
1/4 cups flour, give or take, divided
Pinch of Paprika
Salt & pepper to taste
Tips
We eat this for breakfast and brunch -- as well as supper!
Directions
1. Sauté onions, mushrooms, sausage (break sausage into small crumbles as cooking) and garlic in olive oil in medium pan over low heat until mushrooms are soft, onions translucent and sausage browned.
2. Pour in 2 cups of soy milk.
3. Add 2 tablespoons of flour and stir to thicken mixture to make gravy. While stirring continuously, add additional flour gradually until gravy is desired consistency/ thickness.
4. Stir in paprika, salt and pepper to taste.
5. Remove from heat and pour over vegan biscuits.
