Ingredients

1 clove Garlic sliced
1/4 c Onion diced
1 slice Bacon diced
1 bunch lacitano kale or other dark leaf kale
3 c water
2 tsp chicken bullion
1T Balsamic vinegar
pinch of red pepper flakes
Directions
stem and wash your kale (remove the tough vein that runs through the middle of the leaf) theres no need to chop it but you can if you want
chop your bacon and begin to render it in a pot. slice and dice your garlic and onion, add them to he pan when the bacon is about half cooked. start to sweat the onion and garlic, you want a little bit of color but not to brown them. add the washed kale and sauté. Add the chicken bullion to hot water to dissolve, pour into the pot. bring to a boil. Turn the heat down to a simmer cover and check periodically. the leaves will become tender and delicious after half an hour to forty five minutes add water if needed while the kale cooks to replenish what is lost through evaporation. will make about 4 half cup servings
