Ingredients

-1 head cauliflower (broken up into 4 cups)
-1 cup veg broth
-3/4 cup raw cashews
-5 Tbsp nutritional yeast
-1/2 cup non-dairy milk
-3 Tbsp white miso
-1 Tbsp dijon mustard
-1/2 cup white wine
salt and pepper to taste (optional- I don't use either)
Tips
By adding the wine at the end (I forgot about it the first time I made this) instead of adding it to the saucepan, I caught a buzz off this (I'm not a drinker) - Hence my calling it drunken cauliflower ;)
Directions
1. Steam cauliflower over boiling water
2. Meanwhile, place veg broth, cashews, nutritional yeast, milk, miso, and mustard in food processor and blend until smooth
3. Pour mixture into saucepan and bring to a boil. Reduce heat to low and cook, stirring constantly, until sauce thickens
4. When cauliflower is cooked, remove from heat and place in large serving bowl. (You can leave it like this or mash it up - I like it better mashed up)
5. Pour sauce over cauliflower. Add wine. Mix it all together and serve.
