Ingredients

    1 small red bell pepper, chopped
    1/2 cup cooked spaghetti
    a few black olives, chopped
    a few cherry tomatoes, chopped
    2 teaspoons basil pesto
    a handful of mangetout peas, chopped
    parmesan (optional, to taste)

Tips

If you want to, you can double the pasta quantity, or add meat or fish to make this a more filling meal. Mini slices of bacon work quite well!


Directions

Cook the pasta according the instructions on the packet then leave it to drain. At the same time, boil the mangetout peas until they are chewable but still with a little bite, this should not take more than 7 minutes. Then, while they are cooking, chop the vegetables into very small pieces. Toss all the ingredients together in a bowl and ensure the pesto is well combined before serving. Enjoy!
