Introduction

Ingredients

    * 1 tbsp Olive Oil
    * 1 Potato (med.)
    * Garlic, 2 clove (or to taste)
    * 1 cup Fresh Spinach
    * 1 med Tomato
    * Morningstar Farms Fat Free Scramblers, 1.5 cup (three small containers)



Directions

Heat oven to about 350

Heat oil in a large skillet over med to med-high heat (I put my stove on 7 out of 10). Make sure you have a lid to your pan. While oil is heating, chop potatoes into small squares. (You can use the frozen hash browns or other ready-to-cook potato products to make this really easy!)

Cook potatoes with the lid on. You can add salt, pepper, etc if you would like. Stir frequently. Add the garlic after a few minutes (cook the garlic as long as you like, I like less cooked so add it later). When the potatoes are as soft as you would like them, take the lid off and let them brown as much as you like.

While potatoes are cooking, chop tomato into about the same sized chunks as the potato. Shred or chop spinach too (can use thawed frozen as well).

When potatoes are done to your taste, add tomatoes and spinach. Then dump in the eggs. Stir for a little while, and then place in warm oven. (If your pan handle is plastic, wrap in foil first).

Cook until the eggs are as done as you like them (5-10 minutes).

You can top with cheese (or mix it in as well). I also add chives, red pepper flakes, chili powder, etc. You can add any leftovers you want from your fridge too (bacon, ham, chicken, veggies...the list goes on!)

Serve with ketchup, salsa, cheese on the side, anything!

Makes about 4 servings. Wonderful heated the next day in the microwave as well.
