    1 lb dry navy beans
    2 quarts of water
    1 & 1/2 pound smoked or baked ham hock with meat
    1 cup chopped onion
    1/4 cup fresh parsley, chopped
    1 tsp salt (optional, ham is salty already!)
    1 tsp dried basil
    1/2 tsp dried oregano
    1/2 tsp black pepper (or to taste)
    1 bay leaf
    2 cups carrots, thinly sliced
    1 cup celery, diced
