So, for Christmas I got this little bagged box of Pelican Bay Apple Bread mix and Applesauce. I tinkered with some things and came up with this lovely treat that is perfect for a snack, or with breakfast. As it is very versatile, feel free to add your own flair to it to suit your tastes. Ingredients

1 box Pelican Bay Apple Bread mix (comes in two bags)
3 eggs
1/3 cup Sour Cream or 1/3 cup Yogurt
2 cups Apple Sauce
3/4 cup Vegetable Oil
Tips
As mentioned, this is a very versatile recipe. I substituted 1/3 cup of Voskos Greek Yogurt: Honey Flavor over the sour cream. You can add 1 cup of raisins or other dried fruit, 1/2 cup walnuts or pecans if desired. Add fresh cinnamon to taste for flavor. Any apple sauce will do, but I used Pelican's Bay 23 ounce jar of unsweetened, chunky apple sauce.
Serve bread with butter or cream cheese. You can also whip some maple syrup, or honey in with the cream cheese for an extra tasty treat.
Directions
Preheat oven to 350 degrees
Butter and flower two 12 cup, or four 6 cup baking pans
Beat eggs, vegetable oil, sour cream or yogurt, and apple sauce together
Add both bags to Pelican Bay Apple Bread Mix to bowl and beat until well mixed.
Pour batter in to each cup of muffin trays, about 3/4 full
Bake for 45 minutes
(Depending on the pans you use, the cook time may be higher, up to 60 minutes)
Outside and tops should be a deep golden brown, center should be softer, fork or toothpick should come out clean
Serving Size: 1 muffin
