Introduction

Warm and winter-y! Warm and winter-y!
Number of Servings: 4

Ingredients

    Butternut Squash, 1.25 cup, cubes
    Olive Oil, .25 cup
    Garlic, 1 clove
    Parsley, 2 tbsp
    Radicchio, 2 cup, shredded
    Onions, raw, .25 cup, sliced
Whole Foods Whole Wheat Pizza Dough, 1 pkg
Whole Foods - Fresh Mozzarella, 8 oz, sliced

Directions

Position racks in the upper and lower thirds of the oven and preheat to 475 degrees.

On a parchment-lined baking sheet, toss the butternut squash with 1 tbsp olive oil, season with salt and pepper, and roast in the upper third of the oven until golden and slightly softened, about 12 minutes.

Meanwhile, in a food processor, combine garlic, parsley, and 2 tbsp olive oil. Season with salt and pepper. Toss the radicchio and onion with the remaining 1tbsp olive oil and season as well. Add the roasted squash and toss. Line the baking sheet (with a clean piece of parchment paper) and stretch the dough to fit. Smear the dough with the garlic mixture, leaving a 1/2 inch border. Sprinkle the cheese on top, followed by the squash mixture.

Bake in the lower third of the oven until the crust is a deep golden color, about 15 minutes.
