Introduction

beautiful creamy soup - very cleansing with garlic, onion and spinach beautiful creamy soup - very cleansing with garlic, onion and spinach
Number of Servings: 6

Ingredients

    3 cups fresh spinach
    1/2 cup chopped red onion
    5 tsp minced garlic - or however much you like!
    1 med/large potato - no skin, cubed
    4 cups Campbell's low sodium chicken/beef/veg broth
    1 cup 1% milk
    salt and pepper to taste

Directions

Saute garlic and onion in a little bit of oil for 2-3 minutes, add in broth and potato cubes, salt and pepper and spinach.
Boil potato until soft.
Let ingredients cool a little and then puree in a blender. Put back in soup pot and add milk, warm on med/high until desired thickness has occured.
