Number of Servings: 16

Ingredients

    1 cup chopped onions
    2 cans cooked black beans (if using canned, drain)
    1 can corn (if using canned, drain)
    1 can diced tomatoes, undrained
    1 carton low sodium vegetable broth (4 cups if making your own)
    4 cups water
    1/4 cup cumin
    2 tsp salt free seasoning mix
    1/4 cup red pepper flakes
    2 TBS jarred sliced jalepanos
    1 cup chopped cilantro (more for garnish)
    salt and pepper to taste


Tips

Garnish with slice avocado, black olives, chopped onions, fresh cilantro... so yummy! I also like to toast whole wheat tortillas cut into wedges to serve on the side.


Directions

Add all ingredients in a crock pot. Cook 4 hours on high, 6 to 8 on low. Serve and enjoy!
