Introduction

I found a very similar recipe on the boards, but I wanted to make a few changes and needed to be able to track it on my nutrition tracker. I found a very similar recipe on the boards, but I wanted to make a few changes and needed to be able to track it on my nutrition tracker.
Number of Servings: 20

Ingredients

    2 small eggs, whisked
    2 cups buttermilk
    1/2 cup water
    2 Tbsp. canola oil
    1 tsp. salt
    1 cup whole wheat flour
    1 cup all purpose flour
    1 tsp. baking soda
    2 tsp. baking powder
    18 large strawberries, chopped
    3 Tbsp. pancake syrup per serving

Directions

Mix together the first 5 ingredients. Pour both flours into the bowl, without mixing. Add salt, soda and powder. Gently whisk until mixed thoroughly. Chop strawberries and add to the mixture. Spray a griddle with cooking spray and heat to 350. Using a serving spoon, ladle 2 spoonfuls onto the griddle per pancake. The mixture is very thin, but will cook up like a flat pancake.
