Ingredients

    1/2 lb extra-lean ground turkey
    4 large cloves garlic, diced
    16 oz fat-free, refried black beans (Amy's is an awesome brand)
    1 3/4 cup medium-spicy, chunky salsa
    4 1/2 oz canned green chili peppers, drained and diced
    2 tsp chili powder
    3 Tbsp red onion, thinly sliced
    2/3 cup shredded reduced-fat Pepper-Jack cheese
    8 large burrito-size wheat flour tortilla
    1/3 cup chopped cilantro (optional)

Directions

Preheat oven to 350ºF. Coat a 13 X 9" baking dish with cooking spray.
Add turkey to a lightly sprayed pan, and cook over medium-high heat until lightly browned, about 5 minutes.
Drain any excess liquid from pan.
Add garlic, refried beans, salsa, chili peppers, chili powder and onion.
Cook until heated through, about 3 minutes.
Stir in cheese.
Wrap tortillas in foil and warm in oven for 10 minutes.
Spoon about 1/2 cup of turkey mixture onto each warm tortilla and roll up.
Place seam-side down in prepared baking dish.
Spray lightly with PAM or brush with about 1 tbsp spicy chili oil.
Bake, uncovered, until tortillas are nicely crisp and browned, about 20 minutes.
