Introduction

I adapted this from an old recipe of my Mothers they were wonderful, but not suited for a Diabetic. I adapted this from an old recipe of my Mothers they were wonderful, but not suited for a Diabetic.
Number of Servings: 6

Ingredients

    2 cups of cornmeal
    1 - 1/2 teaspoons of baking powder
    1 teaspoon of baking soda
    1/3 cup of splenda (optional)
    1/2 cup of fat free sour cream
    1 - 1/2 cups of 2% milk
    1/2 can of cream corn
    2 tablespoons of canola oil
    1/4 cup of egg beaters or 2 eggs, lightly beaters.

Directions

Preheat the oven to 450:
Combine all the dry ingredients in a large bowl.
In anouther bowl, beat together the egg beaters, milk, sour cream, corn, and canola oil.
Combine the liquid ingredients with the dry, just enough to moisten it.
Pour into an 8x8 inch pan sprayed with pam.
* I make 6 Jumbo muffins with it.
Bake 15 minutes or until it feels cooked to the touch.
** sometimes I add 1 cup of grated cheddar cheese ( Low fat)
and chopped Jalepeno peppers, to taste.
I usually serve it with Chili!
