Introduction

I wrote this up so I would have a record of my slow-cooker pot roast that is low-carb-no sugar added. I wrote this up so I would have a record of my slow-cooker pot roast that is low-carb-no sugar added.

Ingredients

    1 arm pot roast, about 3.5 lbs
    3 carrots, chopped in large chunks
    3 stalks celery, chopped in large chunks
    1 box of beef stock (about 3 cups)
    1 envelope onion soup mix

Tips

I always serve rice on the side for the rest of my family who do not eat the low-carb lifestyle.


Directions

Line the slow cooker with a liner or spray with cooking spray. Lay vegetables in first on the bottom of the slow cooker. Lay roast on top of vegetables. In separate bowl, mix beef stock and soup mix. Pour the mixture over the top. Add water if more liquid is needed. Cook 8-10 hours in slow cooker.
