Ingredients

    dough:
    1 1/2 large sweet potatoes, cooked and mashed
    2 1/2 cups bisquik mix
    1 egg
    1T butter
    filling:
    1 cup cooked ground venison (about 6oz)
    1 cup sauteed mushroom pieces
    1T butter

    1T butter, to keep from sticking

Directions

steam sweet potatoes in the microwave. Mash, with 1T butter. Add the egg. Slowly (a half cup at a time) add the bisquik mix, mixing thoroughly. Batter should be slightly tacky, but not sticky. refridgerate at least 20 minutes.

Brown the venison, with 1T butter. Set aside. Saute mushrooms until very soft, and finely chop or puree. Mix one cup of each together. Form into small balls (should make about 44).

Roll out the dough, cut into circles, and wrap around the filling. Make sure to seal the dumplings well, or they will come apart in the water.

Bring a pot of water to a rolling boil, and drop the dumplings in. They should have some wiggle room. When they float to the top, cook one minute longer, then remove from water. Spread melted butter over the dumplings to keep them from sticking.

Serving Size: makes 44 dumplings. 4 per serving.
