    2 Containers Trader Joe's Organic Low Sodium Vegetable Broth
    1 Container Trader Joe's Mirepoix
    2 Tbsp Olive Oil
    1 cup lentils
    1 Bay Leaf
    1.5 tsp cumin
    lime (to taste)
    salt and pepper (to taste)


Can be served with a dollop of plain yogurt, and/or chopped cilantro.


Saute the veggies in the olive oil until softened. Add everything but lime, salt, and pepper. Bring to a boil and then reduce heat and simmer for 30 minutes. When lentils are cooked, add salt and pepper and squeeze lime juice to taste.
