Beat the egg white separately and fold it in for lovely light pancakes! Beat the egg white separately and fold it in for lovely light pancakes!
Number of Servings: 14


    1 1/2 c.Whole Wheat Flour
    2 tsp Baking Powder
    1/2 tsp Salt
    2 TB Granulated Sugar
    1 large Egg, fresh, separated
    1 1/2 c. lowfat milk
    2 TB Canola Oil


For buttermilk pancakes, substitute buttermilk for the milk and replace 1 tsp of baking powder with 3/4 tsp. baking soda.


Heat griddle or large pan.
Combine dry ingredients well. Beat together milk, egg yolk and oil. Beat egg white until stiff peaks form.
Blend wet and dry ingredients, gently fold in egg whites. Drop in 1/4 cup portions onto hot, lightly greased griddle, turning once to brown both sides.

Serving Size: makes 14 pancakes
