Introduction
Juicy Rockfish with a very flavourful crunch! Juicy Rockfish with a very flavourful crunch!Number of Servings: 1
Ingredients
-
1 Rockfish fillet, 3 oz
Ginger Root, 1 tsp
Garlic, 1 clove
Sesame Oil, 1 1tsp
Juice of half a lemon
Japanese Bread Crumbs or Panko, 1/3 cup (or even a bit less)
Tips
The breadcrumbs don't get very brown, so may be worth sprinkling the sesame oil over them instead of direct on the fish.
This could work on different kinds of white fish or salmon!
Directions
Preheat the oven to 350 degrees.
Chop the garlic and ginger very finely.
Season the rockfish fillet with ground pepper (no need for salt, but you could use a bit of sea salt if you want) and a bit of seasame oil and lemon juice.
Place the fillet of fish skin side down on a baking tray or dish and cover with the finely chopped ginger and garlic mix and the japanese breadcrumbs.
Cook in the oven for 20-25 minutes. Take out and sprinkle with some chilli flakes and a squeeze of lemon. Serve with lots of green veg with some fresh red chilli.
