Ingredients

    4 eggs
    1tsp vanilla
    1 1/3 cups skim milk
    4 tsp pumpkin pie spice
    2 tsp cinnamon
    1/2 cup sugar
    3/4 cup flour
    1 cup carrots
    4 tbls of raisins
    a small can of crushed pineapple

Tips

Try egg beaters instead of eggs, use whole wheat flour or graham flour, siubstitute other fruits.


Directions

Beat eggs and vanilla until frothy, add pumpkin, mix well. Add dry ingredients, carrots, raisins & pineapple. Spray 24 muffins cups with non stick spray, bake at 350 for 15 minutes or until done.
