Number of Servings: 6


    1 Lb. Boneless/Skinless Chicken Breast, cooked and shredded
    2c. fresh spinach, chopped
    8 Xtreme Wellness Tortillas
    2 Tbsp. Butter
    2 Tbsp. Flour
    2c. Chicken Broth
    1c. Fage 0% Plain Yogurt
    1 - 7oz. can chopped green chilies
    1/4 tsp. Garlic Powder
    1/4 tsp. Chili Powder
    1/2 tsp. Onion Powder
    1.5 c. Mexican 2% Cheese, Shredded


Best served with lettuce, tomato, and avacado.


Mix together shredded chicken, spinach, and 1 c. of the cheese. Divide evenly among the 10 tortillas roll and place seam side down in a 9X9 baking dish. Make a roux with the butter and flour. Add the chicken broth and cook until thickened. Take off heat and add the yogurt, chilies and seasonings. Pour sauce over enchiladas, top with remaining 1/2 c. cheese and bake at 350 degrees for 30 minutes.

Serving Size: Makes 8 enchiladas (1 enchilada per serving)
