3/4 C. uncooked regular long-grain white rice
1/4 tsp. paprika
1/4 tsp. ground black pepper
1 1/4 lb. skinless, boneless chicken breast halves
Tips
I purchase boneless/skinless chicken breasts in bulk, and then cut off all fat, then portion them into 3 oz pieces, and freeze them with a portion for each member of my family, plus 1 extra for lunch the next day. It's a great way to make sure you are having a healthy lunch too!
