Ingredients

1 large onion, chopped
3 Garlic Cloves
1 medium eggplant cut into 1/2 inch cubes
1 Green Bell Pepper cut to half inch pieces
1 Red Bell Pepper cut into half inch pieces
1/2 Serrano pepper (use whole if you like it spicy), chopped finely
2 zucchinis, slices in 1/4 inch slices
1lb or more of flavorsome tomatoes chopped roughly
2 tbs olive oil
Salt and pepper
Tips
A little Herbes de Provence will add a flavor or add herbs of your choice.
This is great with plain white fish like tilapia or just by itself - can be served hot or cold
Directions
Heat up olive oil in a deep casserole.
Sauté onions and chili pepper for a few minutes
Add peppers and garlic (with a garlic press) and sauté for about 5 - 10 minutes
Add eggplant and sauté again for 5 - 10 minutes until they begin to soften.
As you add each ingredient stir the mixture well and often.
Add zucchini and finally tomatoes.
Add salt and pepper to taste and simmer, covered for 30 minutes or so until cooked.
Serving Size: Makes 4 - 6 servings
