    2 cups whole wheat pastry flour
    2 tsp baking powder
    1 tsp salt
    2 cups unsweetened almond milk (with or without vanilla)
    2 large eggs
    2 TBS melted coconut oil
    3 TBS stevia in the raw
    3 TBS flax seed


Easy make ahead breakfast option! Cool pancakes on a wire rack and freeze flat until solid; once frozen, combine in a zip top freezer bag. These pancakes are great for a quick weekday breakfast and can be easily reheated using a toaster.


Wisk together the flour, baking soda, salt, and stevia. Mix together the wet ingredients and combine with the dry ingredients. Use a 1/3 cup measuring cup to scoop out 12 pancakes onto a griddle. Flip to second side when bubbles form on the first side.

Serving Size: 12 pancakes; 2 per serving
