    3 frozen boneless skinless chicken breast (about 3-4 oz.)
    Olive oil cooking spray
    1 small onion - chopped
    1 yellow bell pepper - chopped
    1 pack of portabella mushrooms chopped
    2 tbsp dijon mustard
    1/4 cup of Skinny Asian Dressing (new)
    salt to taste
    pepper to taste
    garlic powder to taste


Sometimes I baked a little longer and turned down the heat to make the breast moist. Make sure the vegetables go on top of the breasts because this keeps them moist and tender.


spray baking dish with olive oil spray, place 3 chicken breasts in (I used frozen and then rinse it off) dash with salt, pepper, and garlic powder put in oven at 400 for about 20 minutes. Meanwhile, chop mushrooms, peppers, onion, and tomato. Then mix the Skinny Asian Dressing and 2 tbsp. of Dijon mustard. Take breast out and dose over the top with vegetables. Then pour the sauce mixture on top and bake for another 25 minutes or until tender.

Serving Size: makes 3 - 4oz. chicken breasts
