Ingredients

    1 medium onion (diced)
    1.5-2 tbsp olive oil
    1/2 green pepper (diced)
    10 baby carrots (diced)
    4 cloves garlic (minced)
    1 can black beans (drained & rinsed)
    1 can red kidney beans (drained & rinsed)
    1 can diced tomatoes
    2-3 tbsp chili powder
    2 tsp cumin powder
    1 tsp paprika
    Red pepper flakes
    1/4 tsp seasoned salt
    Ground black pepper
    1 cup frozen corn


Tips

Serve with corn bread ;)

Chili will thicken as you cook. Don't add too much water when adding beans or chili will remain too thin. Can always add water a little at a time as needed during the simmer steps.


Directions

Heat olive oil in bottom of large pan. Saute onion, peppers, and carrots in oil for ~ 5 min. Add chili powder, cumin, paprika, and pepper flakes -- heat until fragrant. Add beans & diced tomatoes. Add enough water to almost cover chili mixture. Allow to simmer for 10-15 minutes. Season with salt & pepper to taste. Add frozen sweet corn and simmer for another 5-10 minutes.

Serving Size: Makes about 6 (1.5 cup) servings
