Introduction
My attempt to make this wonderful soup fit into my weight watchers program without losing the flavors I so love. I use full-fat products when it comes to cheese, as I personally feel the flavor is better. Ingredients

6 med baked potatoes
6 slices turkey bacon-cooked till crisp
1 12 oz. can evaporated fat free milk
4 oz. shredded extra sharp cheddar cheese
1 cup lite sour cream
1 12 oz. pkg frozen cauliflower
1/3 cup (approximately 6) scallions chopped
4 tsp. Knorr chicken flavored bouillon
salt, lemon pepper and black pepper to taste
Tips
Leave the cooking water in the cauliflower, add the additional ingredients, and then blend till smooth. If it is too thick, add water BEFORE you season and THEN add the bacon and green onions.
Directions
skin the baked potatoes and roughly mash them while the cauliflower is cooking in at least 2 cups of water (till soft). Add the dry bouillon to the cooked cauliflower, as well as the evaporated milk, sour cream and potatoes. Using an immersible blender, process till smooth and creamy. Stir in the shredded cheese, chopped scallions-green and white parts, crumbled bacon, and then season to taste with the lemon pepper, salt and black pepper. Add as much water as needed to obtain your desired consistency.
