Cornish hens with Kale and carrots in the slow cooker. Cornish hens with Kale and carrots in the slow cooker.
Number of Servings: 4


    1 pound uncooked kale, fresh, trimmed
    1 cup onion chopped
    1/2 cup dried cranberries
    5 medium carrot sliced into 1/2 inch pieces
    8 cloves garlic, sliced
    Salt & Pepper to taste
    2 whole Cornish Game Hens


1) Trim the stems from the kale and put the leaves into the slow cooker.
2) Layer on the onions, cranberries, carrots, and garlic.
3) Season with salt and pepper to taste.
4) Place whole hens on top. Season as desired. I added some standard poultry herbs.
5) Set slow cooker on low until done. 4-6 hours.
6) Divided into four portions and serve

    had to add some liquid towards end of cooking, used 1/2 cup chicken stock and left out cranberries... - 7/10/13
